Soup is great in the winter but let’s be honest, we can only handle so much Chicken Soup or Turkey Chili, luckily I came across this Mexican Corn and Poblano Soup recipe from Martha Stewart. I added roasted chicken breast for a little protein and topped with slices of fresh avocado and cilantro leaves.
